Make Orecchiette Yourself
We often quote our favorite chef and full-blooded Italian, Fili, here on the blog. The crazier the idea, the more fun Fili has with the task. But the talent for cooking and baking also runs in his sister Sabrina's blood. These wonderful orecchiette come from her, following an old family recipe. You can see more from Sabrina on Instagram. And from us here now, a little taste and a simple recipe. Unfortunately, not the original from Sabrina and Fili, but one that will surely succeed as well.
Orecchiette
Ingredients:
400g durum wheat semolina
213g water
Water for cooking
213g water
Water for cooking
Preparation:
Mix the semolina and water and knead for 10 minutes. Then let it rest for an hour. Then shape the dough into thin rolls and cut into finger-thick pieces. On a wooden board, pull the dough downward with a knife. Let the orecchiette rest briefly again and then cook in boiling salted water for 2 minutes.
Serve the pasta with your favorite sauce.
