We often quote our favourite chef and full-blooded Italian Fili here on the blog. The crazier the idea, the more Fili enjoys the task. But the talent for cooking and baking is also in his sister Sabrina's blood. She made these great orecchiette from an old family recipe. You can see more of Sabrina on Instagram. And here's a little taste and a simple recipe from us. Unfortunately not the original from Sabrina and Fili, but one that is sure to work as well.
400g durum wheat semolina
Water for cooking
Mix the semolina and water and knead for 10 minutes. Then leave to rest for an hour. Then form the dough into thin rolls and cut finger-thick pieces. On a wooden board, pull the dough away with a knife. Let the orecchiette rest again briefly and then boil them in bubbling salted water for 2 minutes.
Serve the pasta with your favourite sauce.
