New pizza course: Neapolitan pizza
Neapolitan pizza is in a class of its own. World cuisine heritage, supreme discipline and at the same time so wonderfully original. Many customers have asked us for a course. In Filippo Licciardo, we have the perfect man for the job. He is a member of the German national pizza team. Who if not he, could introduce us to this wonderful dish. He is a passionate cook and grew up with pizza.
The course is aimed at advanced amateur cooks. You should already have some experience with pizza and dough so that the mother of all pizzas you succeed - and ideally a wood-burning oven.
Filippo will talk about the basic ingredients and why it is important to follow the recipe exactly. What ingredients must be on an original Neapolitan pizza and where is the balance of ingredients. It will be about dough making, in a Bernardi dough kneading machine and the technique of spreading the dough. Also, of course, the 450 degrees play an important role and the oven.
