Baking the original Pizza Napoletana is an art. As a UNESCO World Heritage Site, the Pizza Napoletana is a cultural asset worthy of protection. The Associazione Verace Pizza Napoletana (AVPN) has dedicated itself to this protection.
The Professional Pizza Course of the AVPN is aimed at chefs and restaurateurs who want to learn how to prepare the original Pizza Napoletana. During 5 days in 40 lessons (6 hours of theory, 34 hours of practice and test) with a maximum of 5 participants, the theory lessons will first discuss the details of the ingredients water, flour, yeast and salt, how to make the dough and the other ingredients. Also, the different types of ovens and their peculiarities.
In practice, the participants cook on AVPN certified pizza ovens from the companies Izzo and Valoriani with wood, gas and electric firing. The trained pizzaiolo of the AVPN impart the knowledge in a relaxed partnership atmosphere. At the end of the course there is a practical and a theoretical exam. The requirements of the AVPN are extremely high and very strict. This guarantees the high international value of the certificates.
The course is held in Italian or English. A German translation is available on request and with binding booking. AVPN work clothes and all materials are included in the price.

In Italy, the land of pizza, AVPN plays a home game. 2000 pizzaioli are certified, appealing to the top ten percent of pizza lovers. Chefs of the AVPN cook in the top gastronomy. In Germany, 5 restaurants are certified so far, there a reservation is necessary. They are widely known among connoisseurs. These include:
- Malafemmena in Berlin (the only one to cook in the AVPN-certified gas oven).

- Pizzeria Bestia in Hildesheim
- Gold of Naples in Aachen
"Interest in AVPN courses among top German restaurateurs is growing," says Jens Hofacker, owner of La Bottega Toscana. He offers the AVPN's classic weekly course for restaurateurs several times a year.
