New arrival: Fontana Maestro
Maestro: small but mighty!
Fontana Forni has a new addition to its product family. Maestro is the name of the little one with the big inner values. It is a portable pizza oven with gas operation. It cuts a fine figure everywhere, on the balcony, the terrace and even when camping. To bake the perfect pizza with the Maestro, all you need is a gas bottle and then you're ready to go. The Maestro heats up to over 400 degrees. The pizza can then be baked in two and a half minutes with the door closed. Two pizzas fit next to each other. If it is used for a longer period of time and several pizzas are baked, it settles between 340 and 400 degrees. This makes it an absolute top model in its class. Even over a longer period of time, such as a cosy evening with friends, the Maestro keeps the heat so that a delicious dessert can also be cooked in the oven.
The Maestro can do more than pizza. Basically, it is an all-rounder. The temperature can be regulated so that dishes that require less heat, such as casseroles, antipasti, vegetables or desserts, can also be prepared in it. It is also a great outdoor addition to an electric household oven. Sometimes you don't want the food smells in your house or flat. With the regulator for the gas flame, it's a breeze to find the right temperature. On the outside, the oven gets about 60 degrees at an internal temperature of 400 degrees. The excellent insulation made of ceramic fibre and the cladding made of high-quality painted steel make the Maestro superior to its competitors in this feature as well; they get hot on the outside. The 2cm thick fireclay bricks that fill the bottom of the Maestro are Made in Italy, food safe and guaranteed to be free of toxins, like some products from the Far East. The fireclay stores the heat and releases it constantly. The base of the pizza also becomes crispy and crunchy without burning.
The Maestro is available in two sizes: 40 cm x 60 cm and 60 cm x 60 cm. For our videos, we used the larger version. In order to be able to give precise information about the small high performer, we familiarised ourselves with it during a team lunch break. It heated up quickly, after about 35 minutes it had reached 350 degrees, the pizza had a decent crust thanks to the high temperature, and the base looked good. We are thrilled and can highly recommend this great oven to all those who are looking for an excellent entry-level model and to those for whom it is important to be mobile and to have good quality.
Tip for baking pizza in the Maestro
We recommend rotating the oven, i.e. place the first pizza on the right side of the stone. If you open the oven to rotate the first pizza, place the second pizza to the left and the third pizza to the right. In this way, we optimise the heat distribution of the firebrick, as a pizza always brings cold into the oven.
