A wood-fired oven is an all-rounder. Anyone who reduces it to pizza is doing it an injustice. Above all, fine meat can be refined thanks to high temperatures. And that's exactly what our chef here has a knack for. His recipe, which is as simple as it is wonderful, is sure to delight you, too:
Buy a very good piece of red meat of your choice.
Heats the oven to 450 degrees. Put a cast iron pan in directly so it gets really hot.
Add some oil to the pan, put your meat in for 3 minutes from each side.
After that, let the meat rest for 5 minutes.
