The time has come: finally, the AVPN-Professional-Pizza course will start again this fall.
Date: 10/26 to 10/30/2020
Italian pizzaioli from the renowned Associazione Verace Pizza Napoletana (AVPN) will come to La Bottega Toscana to share their know-how with chefs and restaurateurs. In a small group of no more than 5 people, the focus for five days is on the real thing, the original, the one and only Pizza Napoletana - as it has been honored by Unesco as a World Heritage Site.
Making this pizza requires a high level of knowledge and practice. At the beginning the course teaches the theory of flour, yeast, hydration, dough making, etc.. From the second day on, the course goes into practice: oven knowledge, firing and materials. And from the third day on, the cooking takes place. Pizza by pizza, the participants learn how to make Vera Pizza Napoletana until they take their theoretical and practical exams on Friday. Once they have passed the certificate, the chefs become part of the AVPN family and can adorn themselves with the AVPN emblem. Connoisseurs at home and abroad are very aware of what a seal of approval this is. It is worth it!
