The Associazione Verace Pizza Napoletana (AVPN) has been protecting the name of the original Napoletan pizza since 1984. Since 2017, the Pizza Napoletana is even a UNESCO World Heritage Site. This heritage obliges and the AVPN is its strict guardian. The organization's seal may only be worn by those who have certified themselves for it. Chefs must complete a one-week course and pass a final exam with a diploma at the end before they are allowed to advertise with it.

AVPN Pizza Course in the Fall
The Professional Pizza Course of the AVPN for Napoletan pizza are in demand, in Italy the AVPN keeps long waiting lists. Here in Germany, we at La Bottega Toscana are the only ones allowed to host these courses. The chefs come directly from the AVPN in Naples to us, the course language is English and Italian. The course covers in detail the theory of dough making, the characteristics of the ingredients, the different types of dough and their peculiarities. Of course, the Izzo Forni and Valoriani doughs are always present. In the fall, a course will be offered again, we will be happy to add you to the waiting list.
