Neapolitan pizza is in a class of its own. World cultural heritage, the royal discipline, and at the same time so wonderfully original. Many customers have asked us for a course. With Filippo Licciardo, we have the perfect man for this. He is a member of the German pizza national team. If not him, who could introduce us to this wonderful dish? He is a passionate chef and grew up with pizza.
The course is aimed at advanced hobby cooks. You should already have some experience with pizza and dough to master the mother of all pizzas – and ideally have a wood-fired oven.
Filippo will talk about the basic ingredients and why it is important to stick to the recipe precisely. Which ingredients must go on an original Neapolitan pizza, and where is the balance of the ingredients? The course will cover dough making in a Bernardi dough kneading machine and the technique of dough spreading. Additionally, the 450 degrees naturally play an important role as well as the oven.
