Heat the oven to 450 degrees. Place a cast iron skillet inside right away so it gets really hot.

Add some oil to the pan, place your meat in it for 3 minutes on each side.

Then let the meat rest for 5 minutes.

Done!

A dream and very juicy! 

Serve with salad and a piece of baguette.
